For the crust
50g butter
handful each fresh parsley and basil, finely chopped
1 lemon, finely grated zest only
100 g pine nuts, toasted, finely chopped
100g fresh breadcrumbs
For the cod
4x150g thick cut cod fillets
salt and freshly ground black pepper
1 lemons, juice only
olive oil, for frying
Preheat the oven to 200C-400F-Gas 6
For the crust, place the butter, herbs, zest, nuts and breadcrumbs into a food processor and blend to a paste
For the cod, season the cod with salt and freshly ground black pepper, squeeze over the lemon juice and spread the crust paste on top of the cod
Place the cod on a baking sheet and bake for 8-10 min, or until the crust is golden-brown and the fish is cooked all the way through
